The City Colleges of Chicago offers many specialty classes for continuing your education in the pastry field.  These classes are for the food enthusiast’s or the professional pastry chef.  Classes run two to three days and will earn you a certificate on completion.

Also offered by the Institute of Culinary Education is the renowned CAPS Program.  Center for the Advanced Pastry Studies is a unique opportunity to learn advanced pastry skills from world renowned pastry chefs.  To qualify for this program you must be a professionally trained chef from an accredited school.  All these courses are in three sessions over a three day course:
